BANGKOK – The locals call it Khao Mang Gai but this Thai version of Singapore’s national chicken rice dish is a must for any Thai visitor.  Here’s what it is:  tender slices of steamed (or boiled) chicken topped with a spicy chili sauce, served with fragrant jasmine rice that’s been cooked in coconut milk and seasoned with bits of fresh ginger and cilantro.  How these basic simple flavors come together in such an amazing way is beyond me.  So much more than just a plate of chicken and rice.  Plus it’s healthy too!  Not usually served in restaurants but there are a few places that specialize in it – Pratunam Restaurant on Petchburi Rd (across from the Pratunam Mall) is probably the most famous.  You can also get it at most hawker stands and any of the shopping mall food courts – just look for the dangling chickens!

The ‘little thing’ that makes it worthwhile:  how a few simple ingredients can come together to create something that just tastes so good.
